Apple Pie Egg Rolls

Ingredients
  

  • 4 large apples Granny Smith or Honeycrisp
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • For the Egg Rolls:
  • 12-15 egg roll wrappers
  • 1 egg for egg wash
  • Vegetable oil for frying
  • For Serving:
  • Powdered sugar
  • Caramel sauce optional
  • Vanilla ice cream optional

Instructions
 

  • Peel and dice apples into small, uniform cubes.
  • In a large skillet, combine apples, sugars, cinnamon, nutmeg, and lemon juice.
  • Cook over medium heat for 5-7 minutes until apples begin to soften.
  • Sprinkle cornstarch over apple mixture, stirring to combine.
  • Cook for an additional 2-3 minutes until sauce thickens.
  • Remove from heat and let filling cool completely.
  • Prepare egg wash by whisking egg with 1 tablespoon water.
  • Lay out egg roll wrapper with a corner pointing toward you.
  • Place 2-3 tablespoons of cooled apple filling in the center.
  • Fold bottom corner over filling, then fold in side corners.
  • Roll tightly, sealing final corner with egg wash.
  • Heat oil to 375°F in a deep skillet or fryer.
  • Carefully fry egg rolls 2-3 at a time until golden brown (2-3 minutes per side).
  • Drain on paper towels to remove excess oil.
  • Dust with powdered sugar before serving.

Notes

Use cold filling to prevent wrapper from getting soggy
Don't overfill egg rolls to prevent bursting
Seal edges completely to prevent filling leakage
Oil temperature is crucial for crispy exterior
Can be prepared in advance and fried just before serving
Freeze uncooked egg rolls for up to 1 month
Variations:
