Zesty Lemon Blueberry Loaf

Y’all, I had to double the batch—it’s THAT good! Frozen berries and a hint of lemon made magic in my 9×13. Crispy edges, soft center, and smiles all around! 🥰 What’s the dessert that gets your family coming back for seconds? 💛

Zesty Lemon Blueberry Loaf 🍋🫐

For the Lemon Blueberry Loaf:
• 1 ½ cups + 1 tbsp all-purpose flour
• 2 tsp baking powder
• 3 large eggs
• 1 cup granulated sugar
• 1 cup plain yogurt (or sour cream)
• ½ tsp salt
• ½ tsp vanilla extract
• ½ cup vegetable oil
• 2 tsp lemon zest
• 1 ½ cups fresh or frozen blueberries

For the Lemon Glaze/Syrup:
• 2 to 3 tbsp lemon juice
• 1 cup sifted confectioner’s sugar

Instructions:
1️⃣ Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
2️⃣ In a bowl, whisk together 1 ½ cups flour, baking powder, and salt. Set aside.
3️⃣ In a large bowl, beat eggs and sugar until light and creamy. Add yogurt (or sour cream), vanilla, oil, and lemon zest. Mix well.
4️⃣ Gradually fold the dry ingredients into the wet, being careful not to overmix.
5️⃣ Coat blueberries with remaining 1 tbsp flour, then gently fold into the batter.
6️⃣ Pour batter into loaf pan and bake for 50-55 minutes, until a toothpick comes out clean.
7️⃣ For the glaze, whisk lemon juice and powdered sugar together. Adjust consistency with more lemon juice or sugar.
8️⃣ Drizzle glaze over the warm loaf. Let it cool, slice, and enjoy! 😋
