3-Packet Slow Cooker Pot Roast

Equipment

  • 6-quart slow cooker
  • Cutting board
  • Knife
  • Measuring spoons
  • Serving platter
  • Meat shredding forks (optional)
  • Ladle

Ingredients
  

  • 3-4 lb chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1 packet Italian dressing mix
  • 1 cup water
  • 1 medium onion chopped
  • 4-5 carrots cut into chunks
  • 3-4 potatoes quartered
  • 2 tablespoons cornstarch optional, for gravy

Instructions
 

  • Place chuck roast in the center of the slow cooker.
  • Sprinkle all three seasoning packets evenly over the roast.
  • Add chopped onions around the meat.
  • Pour 1 cup of water over the roast.
  • Add carrots and potatoes around the sides of the roast.
  • Cover and cook on low for 8-10 hours.
  • Once done, remove meat and vegetables to a serving platter.
  • Optional: To thicken gravy, whisk cornstarch with 1/4 cup cold water.
  • Stir cornstarch mixture into slow cooker liquid and let thicken.
  • Shred meat or slice and serve with vegetables and gravy.

Notes

Choose a well-marbled chuck roast for best results
Can substitute sweet potatoes for regular potatoes
Add additional vegetables like celery or parsnips
Freezes well for up to 3 months
Leftovers can be used for sandwiches or shepherd's pie
Low and slow is key for tender meat
No need to add extra salt due to seasoning packets
Can prepare vegetables night before
