Walnut Banana Caramel Cake

Ingredients:

For the Cake:

3 ripe bananas, mashed
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup chopped walnuts
For the Caramel Sauce:

1/2 cup brown sugar
1/4 cup unsalted butter
1/4 cup heavy cream
1/2 tsp vanilla extract
Pinch of salt
Directions:

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a large bowl, whisk together the mashed bananas, melted butter, and sugar until well combined.
Add the eggs and vanilla extract, mixing until smooth.
In a separate bowl, whisk together the flour, baking soda, and salt. Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
Stir in the chopped walnuts, then pour the batter into the prepared pan.
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
To make the caramel sauce, combine brown sugar, butter, and heavy cream in a saucepan over medium heat. Stir constantly until the mixture thickens, about 5-7 minutes. Remove from heat and add vanilla extract and a pinch of salt. Allow to cool slightly.
Drizzle the warm caramel sauce over the cooled cake and garnish with extra walnuts if desired.
