Slow Cooker Split Pea Soup

•1 lb (2 cups) dried split peas, rinsed

•1 medium onion, chopped

•2 carrots, diced

•2 celery stalks, chopped

•2 cloves garlic, minced

•1 ham bone (or 1 ½ cups diced ham)

•6 cups chicken or vegetable broth

•2 cups water

•1 tsp dried thyme

•½ tsp black pepper

•1 bay leaf

•Salt, to taste (depends on the saltiness of your ham)

Instructions

1.Prepare Ingredients – Rinse the split peas under cold water and chop the vegetables.

2. Add to Slow Cooker – In a 6-quart slow cooker, combine split peas, onion, carrots, celery, garlic, ham bone (or diced ham), broth, water, thyme, black pepper, and bay leaf.

3.Slow Cook – Cover and cook on:

•LOW for 7-8 hours (for extra creamy texture)

•HIGH for 4-5 hours (for a quicker cook time)

4.Remove Ham Bone – If using a ham bone, remove it, shred any remaining meat, and stir it back into the soup. Discard the bone and bay leaf.

5.Blend (Optional) – For a smoother texture, use an immersion blender or mash some peas with a spoon.

6.Taste & Serve – Adjust salt if needed and serve warm with crusty bread or crackers!
