Ingredients:
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 head romaine lettuce, chopped
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/2 cup fresh cilantro, chopped
- 1/4 cup cotija or feta cheese, crumbled
For the lime vinaigrette:
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the chopped lettuce, shredded chicken, black beans, corn, bell pepper, red onion, avocado, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, honey, cumin, chili powder, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle with crumbled cheese and serve immediately.
This salad works great as a main dish or can be served with warm tortillas or tortilla chips on the side. For added crunch, you can also top with crushed tortilla chips before serving.
