Mexican Chicken Salad

Ingredients:

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 head romaine lettuce, chopped
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup cotija or feta cheese, crumbled

For the lime vinaigrette:

  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chopped lettuce, shredded chicken, black beans, corn, bell pepper, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle with crumbled cheese and serve immediately.

This salad works great as a main dish or can be served with warm tortillas or tortilla chips on the side. For added crunch, you can also top with crushed tortilla chips before serving.
