KFC-Inspired Potato Wedges
Ingredients:
3 pounds Russet potatoes
2 cups all-purpose flour
1 1/2 cups milk
1 egg
2 teaspoons salt
1 teaspoon garlic salt
1/2 teaspoon onion powder
1 tablespoon ground black pepper
1 teaspoon poultry seasoning (optional)
Oil for frying
Instructions:
Prep the Potatoes:

Wash the potatoes thoroughly and cut them into uniform wedges, no thicker than 3/8 inch at the widest point.
Place the wedges in a large bowl and cover with water. Let them soak for at least 1 hour, ideally overnight.
Prepare the Coatings:

In a small bowl, whisk together the milk and egg until fully combined.
In another bowl, mix the flour, salt, garlic salt, onion powder, black pepper, and poultry seasoning (if using).
Heat the Oil:

Heat oil in a fryer or large pot to 350°F (175°C).
Coat the Potatoes:

Dredge each potato wedge in the flour mixture, then dip it into the egg wash, and finally coat it again in the flour mixture.
Place the breaded wedges on a wire rack set over a baking sheet and let them sit for 5-10 minutes. This helps the coating adhere better.
First Fry:

Fry the potato wedges in batches for 5-6 minutes. Remove and drain on a wire rack.
Second Fry:

Return the partially fried wedges to the oil and fry for an additional 3-4 minutes until they are golden brown and crispy.
Drain the wedges on a wire rack and serve immediately.
