Crispy Fried Jalapeno Rings
Ingredients:
3 fresh jalapeno peppers, sliced into rings
1/2 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
2 large eggs
4 ounces light beer (or fizzy seltzer/clear soda)
2 to 3 cups peanut or vegetable oil (enough to cover the battered jalapeno rings)
Directions:
Heat the Oil:
In a large pan, heat the oil over medium heat. Ensure the oil is hot but not boiling.
Prepare the Batter:
In a large mixing bowl, combine the flour, garlic powder, paprika, salt, and pepper. Mix well.
Add the eggs to the dry ingredients and beat until a smooth batter forms.
Gradually stir in the beer (or fizzy soda) until well combined.
Coat and Fry:
Working in batches, coat the jalapeno rings in the batter.
Fry the battered jalapeno rings in the hot oil for about 5-6 minutes per batch, turning occasionally, until they are golden and crispy.
Drain and Season:
Remove the fried jalapeno rings from the oil and place them on paper towels to drain.
Lightly salt the rings while they are still hot.
Serve:
Serve the crispy jalapeno rings immediately for the best flavor and texture.
