French Onion Chicken Bake

Ingredients:

4-6 chicken breasts, boneless and skinless
3 large onions, thinly sliced
4 tablespoons butter
2 tablespoons olive oil
2 cloves garlic, minced
1 cup chicken broth
1 tablespoon fresh thyme (or 1 teaspoon dried)
1 bay leaf
1 tablespoon Worcestershire sauce
1½ cups Gruyere cheese, shredded
½ cup Parmesan cheese, grated
Salt and black pepper to taste

Instructions:

Preheat oven to 375°F (190°C).
Season chicken breasts with salt and pepper on both sides.
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown. Remove and set aside.
In the same skillet, melt butter over medium heat. Add sliced onions and cook for 20-25 minutes, stirring occasionally, until deeply caramelized and golden brown.
Add minced garlic and cook for 1 minute until fragrant.
Pour in chicken broth, add thyme, bay leaf, and Worcestershire sauce. Simmer for 5 minutes to reduce slightly.
Return chicken to the skillet, nestling it among the onions.
Top each chicken breast with a mixture of Gruyere and Parmesan cheese.
Transfer skillet to preheated oven and bake for 15-20 minutes, or until chicken is cooked through (internal temperature of 165°F/74°C) and cheese is melted and bubbly.
Optional: Broil for 2-3 minutes at the end to get a golden brown cheese crust.

Serving Suggestion:
Serve hot with crusty bread to soak up the delicious onion sauce, and a side of roasted vegetables or green salad.
Tips:

For extra flavor, add a splash of white wine when adding the chicken broth
You can substitute Gruyere with Swiss cheese if needed
Make sure to slice onions evenly for uniform caramelization
