Angel Chicken Rice<\/p>\n

Cheesy Angel Chicken and Rice Casserole<\/p>\n

Ingredients:<\/p>\n

3 cups cooked chicken, diced or shredded
\n3 cups cooked rice
\n\u00bd cup butter, room temperature and cubed
\n8 ounces cream cheese, room temperature and cubed
\n10.5 ounces cream of chicken soup
\n3 cloves garlic, minced
\n0.7 ounce Italian dressing mix (I used Good Seasons)
\n1 cup chicken stock
\n2 cups shredded Colby Jack cheese, divided use
\nSalt and pepper to taste
\nFresh parsley for garnish
\nDirections:<\/p>\n

Preheat oven to 350 degrees F, and generously spray a 9×13\u201d casserole dish with cooking spray.
\nIn a microwave-safe bowl, soften the cream cheese and butter in the microwave for 20-30 seconds. Whisk until smooth.
\nIn a large mixing bowl, combine the cooked chicken, rice, butter and cream cheese mixture, cream of chicken soup, garlic, Italian dressing mix, chicken stock, half of the shredded cheese, and salt and pepper. Mix well until evenly combined.
\nTransfer the chicken and rice mixture into the prepared casserole dish.
\nTop with the remaining shredded cheese.
\nCover the dish with foil, and bake in the preheated oven for 20-25 minutes, until the cheese is melted and the casserole is bubbling.
\nRemove from oven, and allow the casserole to cool for 5 minutes. Remove foil.
\nGarnish with fresh parsley, and enjoy.
