Strawberry shortcake cheesecake

🛒 Ingredients

Crust:

•2 cups crushed Golden Oreos (or graham crackers)

•5 tbsp unsalted butter, melted

Cheesecake Filling:

•3 (8 oz) blocks cream cheese, softened

•1 cup granulated sugar

•3 large eggs

•1 cup sour cream

•1 tbsp vanilla extract

•1 tbsp all-purpose flour

Strawberry Layer:

•1 cup strawberry preserves

•1 ½ cups fresh strawberries, chopped

Whipped Topping:

•2 cups heavy whipping cream

•¼ cup powdered sugar

•1 tsp vanilla extract

Strawberry Shortcake Crumble:

•1 ½ cups Golden Oreos, crushed

•1 ½ cups freeze-dried strawberries, crushed

•3 tbsp butter, melted

 

👨‍🍳 Instructions

1️⃣ Preheat Oven & Prepare Pan – Preheat your oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and grease the sides.

2️⃣ Make the Crust – Mix crushed Golden Oreos with melted butter, then press firmly into the bottom of the pan. Bake for 10 minutes, then let it cool.

3️⃣ Prepare Cheesecake Filling – Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing on low speed. Stir in sour cream, vanilla, and flour until combined.

4️⃣ Assemble Layers – Pour half of the cheesecake batter over the cooled crust. Spread strawberry preserves and chopped strawberries on top. Add the remaining cheesecake batter, smoothing the top.

5️⃣ Bake the Cheesecake – Place the pan in a water bath (a larger pan filled with hot water) and bake for 50-60 minutes until the center is set but slightly jiggly. Turn off the oven, crack the door, and let it cool for 1 hour. Refrigerate for at least 4 hours or overnight.

6️⃣ Make Shortcake Crumble – In a food processor, blend Golden Oreos and freeze-dried strawberries until coarse. Mix in melted butter until crumbly.

7️⃣ Whipped Topping – Beat heavy whipping cream, powdered sugar, and vanilla until soft peaks form.

8️⃣ Assemble & Serve – Spread whipped topping over the chilled cheesecake. Sprinkle generously with strawberry shortcake crumble. Garnish with fresh strawberries if desired.

 

🔖 Notes & Tips

No freeze-dried strawberries? Use strawberry Jell-O powder instead.

Don’t overbake! The center should be slightly wobbly when removed.

Water bath is key for a smooth, crack-free cheesecake.

Store in fridge for up to 5 days or freeze for longer storage.
