1οΈβ£ Preheat Oven & Prepare Pan β Preheat your oven to 325Β°F (163Β°C). Line the bottom of a 9-inch springform pan with parchment paper and grease the sides.
2οΈβ£ Make the Crust β Mix crushed Golden Oreos with melted butter, then press firmly into the bottom of the pan. Bake for 10 minutes, then let it cool.
3οΈβ£ Prepare Cheesecake Filling β Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing on low speed. Stir in sour cream, vanilla, and flour until combined.
4οΈβ£ Assemble Layers β Pour half of the cheesecake batter over the cooled crust. Spread strawberry preserves and chopped strawberries on top. Add the remaining cheesecake batter, smoothing the top.
5οΈβ£ Bake the Cheesecake β Place the pan in a water bath (a larger pan filled with hot water) and bake for 50-60 minutes until the center is set but slightly jiggly. Turn off the oven, crack the door, and let it cool for 1 hour. Refrigerate for at least 4 hours or overnight.
6οΈβ£ Make Shortcake Crumble β In a food processor, blend Golden Oreos and freeze-dried strawberries until coarse. Mix in melted butter until crumbly.
7οΈβ£ Whipped Topping β Beat heavy whipping cream, powdered sugar, and vanilla until soft peaks form.
8οΈβ£ Assemble & Serve β Spread whipped topping over the chilled cheesecake. Sprinkle generously with strawberry shortcake crumble. Garnish with fresh strawberries if desired.
