Southern Pineapple Cake
Ingredients
For the Cake:
Cooking spray
2 cups all-purpose flour
1 ½ cups white sugar
1 teaspoon baking soda
½ teaspoon kosher salt
2 large eggs
1 (20-ounce) can crushed pineapple with juice
1 teaspoon vanilla extract
For the Frosting:
1 (8-ounce) package cream cheese, softened
½ cup unsalted butter, softened
1 ½ cups confectioners’ sugar
1 teaspoon vanilla extract
Directions
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray.
Prepare the Cake Batter:
In a large bowl, mix together the flour, white sugar, baking soda, and kosher salt.
Create a well in the center of the dry ingredients. Add the eggs, crushed pineapple with juice, and vanilla extract to the well.
Whisk the ingredients together until well combined.
Bake the Cake:
Pour the batter into the prepared baking dish.
Bake in the preheated oven for about 35 minutes, or until the top is deeply browned and a toothpick inserted into the center comes out clean.
Allow the cake to cool in the baking dish on a wire rack for 1 to 2 hours.
Prepare the Frosting:
In a mixing bowl, combine the softened cream cheese and butter. Beat with an electric mixer until smooth, about 1 minute.
Add the confectioners’ sugar and vanilla extract, then continue to beat until the frosting is creamy, about 1 to 2 minutes more.
Frost the Cake:
Once the cake has cooled completely, spread the cream cheese frosting evenly over the top.
