Ingredients
•1 cup cornmeal
•1 cup all-purpose flour
•1 tbsp baking powder
•½ tsp salt
•½ cup granulated sugar (adjust for sweetness)
•2 large eggs
•1 cup sour cream
•½ cup milk
•½ cup unsalted butter, melted
•1 tbsp honey (optional, for extra sweetness)
Instructions
1. Preheat Oven – Set to 375°F (190°C) and grease a 9-inch baking dish or muffin tin.
2. Mix Dry Ingredients – In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
3. Combine Wet Ingredients – In another bowl, whisk eggs, sour cream, milk, melted butter, and honey until smooth.
4.Make the Batter – Gradually add the wet mixture to the dry ingredients, stirring until just combined. (Do not overmix!)
5.Bake – Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
6.Cool & Serve – Let it cool slightly before slicing. Serve warm with butter, honey, or your favorite jam!
