The Best Old-Fashioned Swiss Steak

Ingredients
For the Steak
2 pounds cubed steak
¼ cup all-purpose flour
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
¼ cup vegetable oil
For the Gravy
1 onion, diced
1 green pepper, sliced
8 ounces mushrooms, sliced
1 can (15 ounces) diced tomatoes
2 cups beef broth
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon sugar
1 teaspoon dried thyme
For Thickening
2 tablespoons water
2 tablespoons cornstarch
Instructions
Preparing the Steak
Mix flour, garlic powder, salt, and pepper
Dredge each piece of steak in seasoned flour mixture
Heat vegetable oil in large oven-safe pot or Dutch oven
Brown steaks on both sides (about 3-4 minutes per side)
Remove steaks and set aside
Making the Gravy
In the same pot, sauté:
Diced onion
Sliced green pepper
Mushrooms
Add and stir in:
Tomato paste
Diced tomatoes
Beef broth
Worcestershire sauce
Dried thyme
Sugar
Braising
Return steaks to pot
Cover with lid
Place in preheated 325°F oven
Cook for 1 to 1½ hours until meat is tender
Finishing
Remove from oven
Mix water and cornstarch to make slurry
Stir slurry into gravy
Simmer until thickened to desired consistency

Check meat tenderness at 1 hour
Adjust seasoning before serving
