Hearty Potato Bacon Chowder Recipe
This Hearty Potato Bacon Chowder is a comforting dish that combines creamy potatoes with the savory flavor of crispy bacon. Perfect for chilly days, this chowder is easy to make and sure to please a crowd.

Ingredients

• Bacon: 6 slices, chopped
• Onion: 1 medium, finely chopped
• Garlic: 2 cloves, minced
• Potatoes: 3 large russet potatoes, peeled and diced
• Chicken Broth: 4 cups
• Heavy Cream: 1 cup
• Cheddar Cheese: 1 cup, shredded (sharp recommended)
• Salt and Pepper: to taste
• Chives: 2 tablespoons, chopped (optional for garnish)

Instructions

1. Cook the Bacon: In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate. Leave about 2 tablespoons of bacon drippings in the pot.
2. Sauté Aromatics: Add the chopped onion to the pot with the bacon drippings and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
3. Add Potatoes and Broth: Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then reduce heat and let it simmer uncovered until the potatoes are tender, about 15-20 minutes.
4. Mash Potatoes: Using a masher or an immersion blender, slightly mash some of the potatoes to create a thicker consistency while leaving some chunks for texture.
5. Incorporate Cream and Cheese: Stir in the heavy cream and shredded cheddar cheese until well combined and melted. Season with salt and pepper to taste.
6. Combine with Bacon: Return the crispy bacon to the pot, saving some for garnish if desired. If using, stir in fresh chives.
7. Serve: Ladle the chowder into bowls, garnish with reserved bacon and additional chives, and serve hot.
