✨ Ingredients:

•6 cups potatoes, peeled & diced

•6 slices bacon, cooked & crumbled (plus extra for topping)

•1 small onion, chopped

•2 cloves garlic, minced

•4 cups chicken broth

•1 tsp salt

•½ tsp black pepper

•½ tsp smoked paprika (optional)

•1 cup heavy cream (or half & half)

•1 cup shredded cheddar cheese (optional)

•2 tbsp butter

Instructions:

1️⃣ Add potatoes, cooked bacon, onion, garlic, broth, salt, pepper, and paprika to a slow cooker. Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.

2️⃣ Blend half the soup using an immersion blender (or mash with a fork) for a creamier texture.

3️⃣ Stir in heavy cream, butter, and cheese, letting everything melt together for 10-15 minutes.

4️⃣ Serve hot, topped with extra bacon, shredded cheese, and green onions if desired.
