3 eggs
12 tablespoons sugar
12 tablespoons oil
12 tablespoons milk
12 tablespoons flour
Zest and juice of half a lemon
11g baking powder
20cm (8-inch) cake pan
Instructions:

Preheat the Oven: Set your oven to 180°C (356°F) to preheat while you prepare the batter.

Mix Eggs and Sugar: In a large mixing bowl, crack 3 eggs and add 12 tablespoons of sugar. Whisk together until the mixture becomes creamy and smooth.

Incorporate Oil: Pour in 12 tablespoons of oil and blend it into the egg and sugar mixture until well combined.

Add Milk: Stir in 12 tablespoons of milk, continuing to mix until the batter is uniform.

Sift in Flour: Gradually sift in 12 tablespoons of flour, stirring constantly to prevent lumps from forming.

Add Lemon: Zest and juice half a lemon, then add both to the batter, infusing it with a bright citrus flavor.

Add Baking Powder: Sprinkle in 11g of baking powder and mix thoroughly to ensure it’s evenly distributed.

Prepare the Cake Pan: Grease a 20cm (8-inch) cake pan with butter or oil to prevent sticking. Pour the prepared batter into the pan, spreading it evenly.

Bake the Cake: Place the cake in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the cake from the oven and allow it to cool. Optionally, dust the top with powdered sugar or drizzle with a lemon glaze for extra flavor.
