Sheet Pan Blueberry Shortcake

Sheet Pan Blueberry Shortcake! 🫐🍰

Ingredients:
– Cake: 2 ¾ cups cake flour, 1 cup butter, 2 ½ cups sugar, 5 egg whites, 1 cup milk, 2 tsp baking powder, 2 tsp vanilla.
– Blueberry Topping: 4 ½ cups blueberries, ¼ cup sugar, ¼ cup lemon juice, 2 tbsp cornstarch.
– Whipped Topping: 2 oz cream cheese, ½ cup sugar, 2 cups heavy cream, ½ tsp vanilla, pinch of salt.

Instructions:
1️⃣ Preheat oven to 350°F. Bake cake in a lined sheet pan for 28-30 mins. Cool and chill.
2️⃣ Cook 4 cups blueberries, sugar, lemon juice, and cornstarch until thick. Cool and mix in remaining blueberries.
3️⃣ Whip cream cheese and sugar; add heavy cream until stiff peaks form.
4️⃣ Assemble: Layer cake, blueberry topping, and whipped topping. Repeat.
