Seafood Pasta Salad
Ingredients:
8 oz bowtie or rotini pasta
1/2 lb cooked shrimp, peeled and deveined
1/2 lb cooked crab meat (or imitation crab)
1/2 cup celery, finely chopped
1/4 cup red onion, finely diced
1/3 cup sweet bell peppers, diced
1/4 cup fresh parsley, chopped
1/2 cup mayonnaise
1/4 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 teaspoon Old Bay seasoning
1 teaspoon dried dill (or 1 tablespoon fresh dill)
Salt and pepper, to taste
Instructions:
Cook the Pasta: Cook the pasta according to the package instructions. Drain and rinse with cold water to cool.
Prepare the Ingredients: In a large mixing bowl, combine the cooled pasta, shrimp, crab meat, celery, red onion, bell peppers, and parsley.
Make the Dressing: In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, Old Bay seasoning, dill, salt, and pepper.
Combine: Pour the dressing over the pasta mixture and gently toss until all ingredients are well-coated.
Chill: Cover and refrigerate for at least 1 hour to let the flavors meld.
Serve: Serve chilled, garnished with extra parsley or lemon wedges if desired.
