Savory Sausage and Cabbage Casserole
This hearty Sausage and Cabbage Casserole is the ultimate comfort food. Packed with flavorful breakfast sausage and fresh veggies, it’s a dish the whole family will crave.
Ingredients:
1/2 head cabbage, shredded or chopped
1/2 cup water (for steaming cabbage)
1/4 teaspoon black pepper
1/2 teaspoon salt (optional)
1 (14.5-ounce) can diced tomatoes, undrained (use tomatoes with green chilis for extra kick)
1/4 cup water (for casserole)
1 pound pork breakfast sausage
1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1 teaspoon oregano or Italian seasoning
1 clove garlic, minced
1 1/2 cups shredded cheese (Mexican blend and Parmesan recommended, but cheddar works well too)
Instructions:
Steam the Cabbage:
In a microwave-safe dish, steam the cabbage with 1/2 cup of water for 5 minutes. Drain and spread the cabbage evenly in the bottom of a greased casserole dish. Season with black pepper and salt. Pour the diced tomatoes and 1/4 cup of water over the cabbage.
Cook the Sausage Mixture:
In a skillet, cook the breakfast sausage with onion, green pepper, oregano, and garlic over medium heat until the sausage is browned and fully cooked. Spread the sausage mixture over the cabbage in the casserole dish.
Top and Bake:
Sprinkle the shredded cheese evenly over the sausage mixture. Cover the casserole dish with foil and bake in a preheated oven at 350°F for 60 minutes. Remove the cover for the last 15 minutes to let the cheese become golden and bubbly.
