Rotel Pasta
Creamy Rotel Tomato and Sausage Pasta
Ingredients:
16 oz penne pasta
1 lb Italian sausage, casings removed
1 can (10 oz) Rotel tomatoes with green chilies
1 cup heavy cream
1 cup grated cheddar cheese
1 tbsp butter
1 onion, diced
2 cloves garlic, minced
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Directions:
Cook penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
In a large skillet, melt butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
Add minced garlic to the skillet and sauté for another minute until fragrant.
Add the Italian sausage to the skillet, breaking it up into small pieces. Cook until browned and fully cooked through.
Pour in the can of Rotel tomatoes with green chilies, stirring to combine. Bring to a gentle simmer.
Stir in heavy cream and paprika, letting the sauce thicken for a few minutes.
Add the cooked pasta to the skillet, stirring to coat the pasta with the sausage and tomato sauce. Season with salt and pepper to taste.
Stir in the grated cheddar cheese, allowing it to melt into the sauce.
Serve immediately, garnished with fresh parsley.
