•1 tsp salt

•½ tsp black pepper

•1 tsp garlic powder

•½ tsp paprika

•½ tsp Italian seasoning

•1 tbsp olive oil

For the Filling:

•1 cup fresh spinach, chopped

•½ cup roasted red peppers, sliced

•1 cup shredded mozzarella cheese

•½ tsp red pepper flakes (optional, for spice)

•1 tbsp cream cheese (optional, for extra creaminess)

For Cooking & Garnish:

•1 tbsp olive oil (for searing)

•2 tbsp butter (for added flavor)

•1 tbsp fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Chicken

1️⃣ Preheat the oven to 375°F (190°C).

2️⃣ Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.

3️⃣ Season both sides of the chicken with salt, pepper, garlic powder, paprika, and Italian seasoning.

Step 2: Make the Filling

4️⃣ In a mixing bowl, combine chopped spinach, roasted red peppers, mozzarella cheese, red pepper flakes, and cream cheese (if using). Mix well.

Step 3: Stuff the Chicken

5️⃣ Divide the filling evenly between the chicken breasts and carefully stuff each pocket.

6️⃣ Secure with toothpicks or kitchen twine to prevent the filling from spilling out.

Step 4: Sear the Chicken

7️⃣ Heat olive oil in a large skillet over medium-high heat.

8️⃣ Sear the stuffed chicken for 2-3 minutes per side until golden brown.

Step 5: Bake to Perfection

9️⃣ Transfer the seared chicken to an oven-safe baking dish.

🔟 Dot with butter for extra juiciness.

1️⃣1️⃣ Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 6: Serve & Enjoy

1️⃣2️⃣ Remove toothpicks, garnish with fresh parsley, and serve hot!

Storage Options

Refrigerator: Store in an airtight container for up to 3 days.

Freezer: Wrap each stuffed chicken breast tightly and freeze for up to 2 months. Thaw overnight in the fridge before reheating.

Reheating: Warm in a 350°F oven for 10-12 minutes or in a skillet over low heat to keep it juicy.

Notes & Tips

Make it cheesy: Swap mozzarella for provolone or feta for a different flavor twist.

Add extra protein: Mix in cooked bacon or diced grilled chicken into the filling.

Spice it up: Add a pinch of cayenne or hot sauce for a kick.

Pair it with: Roasted veggies, garlic mashed potatoes, or a fresh salad.
