Pineapple Teriyaki Chicken Meatballs
Tropical Glazed Teriyaki Chicken Meatballs
Ingredients:
1 lb ground chicken
1 cup breadcrumbs
1 egg
1/4 cup green onions, chopped
1/2 cup pineapple juice
2 tablespoons soy sauce
1 teaspoon garlic powder
1 teaspoon ginger, grated
1/2 cup teriyaki sauce
1 cup pineapple, chopped
Salt and pepper to taste
Directions:
Preheat your oven to 400°F (200°C).
In a large bowl, mix together the ground chicken, breadcrumbs, egg, green onions, pineapple juice, soy sauce, garlic powder, ginger, salt, and pepper until well combined.
Form the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the meatballs are cooked through.
In a large skillet, heat the teriyaki sauce over medium heat. Add the baked meatballs and chopped pineapple. Toss to coat and cook for an additional 5 minutes, or until the sauce is thickened and the pineapple is heated through.
Serve hot, garnished with additional green onions if desired.
