Pecan Cheesecake Squares
A delightful combination of creamy cheesecake and crunchy pecan topping, these bars are rich, nutty, and absolutely irresistible!

Ingredients
For the Crust:
•1 ½ cups graham cracker crumbs
•½ cup finely chopped pecans
•¼ cup sugar
•½ cup unsalted butter, melted
For the Cheesecake Layer:
•2 (8 oz) packages cream cheese, softened
•½ cup sugar
•2 eggs
•1 tsp vanilla extract
For the Pecan Topping:
•1 cup chopped pecans
•½ cup brown sugar, packed
•¼ cup light corn syrup
•¼ cup heavy cream
•2 tbsp unsalted butter
•1 tsp vanilla extract
Instructions
1️⃣ Preheat & Prepare the Pan:
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.
2️⃣ Make the Crust:
In a bowl, mix graham cracker crumbs, chopped pecans, sugar, and melted butter. Press firmly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
3️⃣ Prepare the Cheesecake Layer:
In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla. Pour the mixture over the cooled crust and spread evenly.
4️⃣ Bake the Cheesecake:
Bake for 20-25 minutes, or until the center is set. Let it cool while you prepare the topping.
5️⃣ Make the Pecan Topping:
In a saucepan over medium heat, combine brown sugar, corn syrup, heavy cream, and butter. Stir until the butter is melted and the mixture is smooth. Remove from heat and stir in vanilla and pecans.
6️⃣ Assemble & Cool:
Pour the pecan topping evenly over the cooled cheesecake layer. Let it cool completely, then refrigerate for at least 2 hours before slicing.
7️⃣ Serve & Enjoy!
Cut into squares and serve chilled or at room temperature.
Storage Options
•Refrigerate: Store in an airtight container in the fridge for up to 5 days.
•Freeze: Wrap individual squares and freeze for up to 2 months. Thaw in the refrigerator before serving.
Notes
•For a thicker cheesecake layer, use 3 packages of cream cheese and increase the sugar to ¾ cup.
•Swap pecans for walnuts if desired.
•Add a pinch of sea salt to the pecan topping for extra depth of flavor.
