One Pot Mexican Rice Casserole

This quick and easy ground beef recipe is bursting with flavor! Your whole family will love this hearty casserole loaded with beef, rice, corn, and plenty of taco goodness.

Ingredients:
1 pound ground beef
1 small onion, diced
Salt & pepper, to taste
2 tablespoons taco seasoning
1 teaspoon garlic powder
1 cup long grain white rice
1 1/2 cups beef broth
1 (15-ounce) can corn, drained
8 ounces tomato sauce
1/2 cup salsa
1 cup shredded cheese
Directions:
Cook the Ground Beef and Onion:

In a large skillet over medium-high heat, cook the ground beef and diced onion with salt and pepper to taste until the beef is no longer pink. Drain excess grease if needed.
Season the Beef:

Return the skillet to the stove and sprinkle the cooked beef with garlic powder and taco seasoning.
Combine Ingredients:

Stir in the rice, beef broth, drained corn, tomato sauce, and salsa. Mix well.
Cook the Rice:

Bring the mixture to a boil. Cover, reduce heat to low, and simmer for 18-20 minutes until the rice is tender.
Add Cheese:

Top the casserole with shredded cheese. Return the lid to the skillet and let it sit for 2-3 minutes until the cheese is melted.
