Old Fashioned Soft Molasses Cookie

•3/4 cup (170g) unsalted butter, softened

•1 cup (200g) granulated sugar, plus extra for rolling

•1 large egg

•1/4 cup (60ml) molasses

•2 cups (240g) all-purpose flour

•2 teaspoons ground ginger

•1 teaspoon ground cinnamon

•1/2 teaspoon ground cloves

•1/4 teaspoon ground nutmeg

•1 teaspoon baking soda

•1/4 teaspoon salt

Instructions:

1.Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them.

2.Mix the Wet Ingredients: In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3-4 minutes. Add the egg and molasses, and continue to beat until smooth and well combined.

3.Combine the Dry Ingredients: In a separate bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt until evenly distributed.

4.Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

5.Form the Cookies: Roll the dough into 1-inch balls using your hands. Roll each ball in a little extra granulated sugar to coat.

6.Bake the Cookies: Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon.

7.Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers are still soft. They will continue to firm up as they cool.

8.Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

9.Serve and Enjoy: These soft, chewy molasses cookies are perfect with a glass of milk or a cup of tea! Enjoy the warm, spiced flavor in every bite.
