No-Bake Oreo Mint Cheesecake
Crust:

2 cups Oreo cookie crumbs (about 24 Oreos, finely crushed)
5 tbsp unsalted butter, melted
Filling:

16 oz cream cheese, softened
1 cup powdered sugar
2 cups whipped cream
1 tsp pure peppermint extract
A few drops green food coloring (optional)
1 cup crushed Oreos
1/2 cup mini chocolate chips (optional for extra crunch)
Topping:

1 cup whipped cream
1/4 cup crushed Oreos
Fresh mint leaves for garnish (optional)
Instructions
Make the Crust:
Combine the Oreo crumbs and melted butter in a bowl. Press the mixture into the bottom of a 9-inch springform pan to form a firm crust. Chill in the refrigerator while you prepare the filling.
Prepare the Filling:
In a large bowl, beat the cream cheese until smooth and creamy. Gradually add powdered sugar and continue to mix until well combined. Gently fold in the whipped cream until smooth, then add the peppermint extract and food coloring. Mix until the color is evenly distributed.
Layer It Up:
Fold in the crushed Oreos and mini chocolate chips into the minty cream cheese mixture. Pour the filling over the chilled crust, smoothing the top with a spatula.
Chill:
Refrigerate for at least 4 hours or overnight until the cheesecake is set.
Decorate:
Top the cheesecake with a layer of whipped cream and sprinkle with crushed Oreos. Add fresh mint leaves for an extra touch of green. Slice, serve, and enjoy every minty bite!
