Ingredients
Pasta Salad
1 pound rotini pasta
3 cups cherry tomatoes, halved
8 ounces fresh mozzarella, halved
1 pound salami, cubed
¾ cup kalamata olives, sliced
¾ cup pepperoncini (optional)
½ cup red onion, sliced
½ cup fresh parsley, chopped
Homemade Italian Dressing
1½ cups olive oil
¼ cup vinegar
¼ cup water
2 tablespoons salt
2 cloves garlic
1 tablespoon sugar
2 teaspoons oregano
2 teaspoons basil
Fresh ground black pepper to taste
Instructions
Pasta Preparation
Cook rotini according to package directions
Drain and rinse under cold water
Allow pasta to cool completely
Dressing
Combine all dressing ingredients in a bowl or jar
Whisk thoroughly until well combined
Taste and adjust seasonings as needed
Assembly
In a large serving bowl, combine:
Cooled pasta
Cherry tomatoes
Fresh mozzarella
Cubed salami
Kalamata olives
Pepperoncini (if using)
Red onion
