Lemon Blueberry Delight
Ingredients
For the Crust
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/4 cup granulated sugar
For the Cream Cheese Layer
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 (8 oz) container whipped topping, divided
For the Lemon Layer
- 2 (3.4 oz) packages instant lemon pudding mix
- 2 1/2 cups cold milk
- Zest of 1 lemon
For the Blueberry Layer
- 3 cups fresh blueberries
- 1/4 cup granulated sugar
- 2 tablespoons water
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Make the Crust:
- Mix graham cracker crumbs, melted butter, and sugar
- Press firmly into a 9×13 inch baking dish
- Refrigerate while preparing other layers
- Prepare the Cream Cheese Layer:
- Beat cream cheese until smooth
- Add powdered sugar and vanilla, beat until well combined
- Fold in half of the whipped topping
- Spread over the crust
- Chill for 15 minutes
- Make the Lemon Layer:
- Whisk pudding mix with cold milk until thickened
- Stir in lemon zest
- Spread over cream cheese layer
- Chill for 15 minutes
- Prepare the Blueberry Layer:
- Combine 2 cups blueberries, sugar, and water in a saucepan
- Cook over medium heat until berries burst
- Mix cornstarch with lemon juice, add to pan
- Cook until thickened
- Cool completely
- Fold in remaining fresh blueberries
- Spread over lemon layer
- Finish and Chill:
- Top with remaining whipped topping
- Garnish with additional blueberries and lemon zest
- Refrigerate for at least 4 hours or overnight
