leftover mashed potatoes

It seems that whenever I make mashed potatoes, I always make way too much. No matter how much I’ve tried to calculate and estimate, at the end of the dinner, there’s always a leftover container filled with mashed potatoes. We could just eat them with tomorrow’s dinner, but day-old mashed potatoes aren’t quite as good as fresh.

What to Do With Leftover Mashed Potatoes:
There are a couple ways to get around this. You could freeze the mashed potatoes to enjoy with another meal. If you’ve got enough leftover potatoes, you could simply add the potatoes to a saucepan and add in milk and stir up a batch of potato soup. Or you could make everyone super duper happy and make some of these easy leftover mashed potato patties

Every bite of these pillowy soft mashed potato patties is heavenly! Flavorful, fluffy and loaded with deliciousness, these simple potato patties with crisp crust are a crowd-pleaser! Let’s whip them up!
