Ingredients:
2 lb boneless chicken thighs, cut into 2-inch pieces
1/4 cup cornstarch
1/4 tsp salt
1/4 tsp pepper
1/2 tsp paprika
1/2 cup diced onions
2 jalapeños, sliced
Vegetable oil for frying
For the Sauce:
1/4 cup soy sauce
1/4 cup cold water
3 tbsp brown sugar
1/2 tsp ground ginger
2 cloves garlic, minced
1 tsp cornstarch
Optional: red pepper flakes
Directions:
Coat the Chicken:
In a mixing bowl, combine chicken pieces with cornstarch, salt, pepper, and paprika. Ensure each piece is evenly coated.
Prepare the Sauce:
Mix all sauce ingredients in a bowl until smooth; set aside.
Fry the Chicken:
Heat the oil in a deep skillet to 350°F. Fry the chicken in batches for 7-8 minutes until golden and cooked through. Avoid overcrowding the skillet.
Cook the Vegetables:
Drain all but 2 tablespoons of oil from the skillet. Add sliced jalapeños and cook for 2 minutes, then add onions and cook for an additional minute.
Combine and Serve:
Pour in the prepared sauce, allowing it to thicken slightly. Return the chicken to the skillet and mix well to coat the chicken evenly.
Serve the chicken over rice with grilled pineapple, sautéed bell peppers, and garnish with green onions.
