Italian Sausage with Peppers and Onions

Ingredients:

1/4 cup extra-virgin olive oil
1 pound sweet Italian sausage
2 bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon Italian seasoning
1/4 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup chicken broth
1 (15-ounce) can diced tomatoes
Salt to taste
1/4 teaspoon red pepper flakes (optional)
Directions:
Cook the Sausage:

Heat the oil in a large skillet over medium heat.
Add the sausages and cook until browned on both sides, about 7 to 10 minutes.
Remove the sausages from the pan and drain on paper towels.
Prepare the Vegetables:

In the same skillet, keep the heat at medium and add the Italian seasoning, basil, and garlic.
Cook for 2 minutes until the garlic is fragrant.
Make the Sauce:

Stir in the chicken broth, diced tomatoes, and tomato paste.
Add the red pepper flakes, if using.
Add the Peppers and Onions:

Add the sliced bell peppers, onions, salt, and black pepper.
Bring the mixture to a simmer.
Combine and Simmer:

Return the browned sausages to the skillet with the vegetables.
Reduce the heat to low and simmer for 15 minutes, or until the sauce has thickened.
Serve:

Serve the sausage and pepper mixture over mashed potatoes, noodles, polenta, or cauliflower rice.
For a sandwich option, split hoagie rolls lengthwise, hollow out the bottom side, and fill with the sausage mixture.
