Ingredients
For the Bread:
β’2 cups all-purpose flour
β’1 cup granulated sugar
β’Β½ cup brown sugar, packed
β’1 tsp baking soda
β’1 tsp cinnamon
β’Β½ tsp salt
β’2 large eggs
β’Β½ cup vegetable oil
β’1 tsp vanilla extract
β’1 cup mashed ripe bananas (about 2 bananas)
β’Β½ cup crushed pineapple, drained
β’Β½ cup chopped pecans or walnuts (optional)
For the Glaze (Optional):
β’1 cup powdered sugar
β’2 tbsp milk or pineapple juice
β’Β½ tsp vanilla extract
Instructions
1. Preheat Oven & Prep Pan β Set oven to 350Β°F (175Β°C) and grease a 9×5-inch loaf pan.
2. Mix Dry Ingredients β In a large bowl, whisk together flour, sugar, brown sugar, baking soda, cinnamon, and salt.
3. Combine Wet Ingredients β In another bowl, whisk eggs, oil, vanilla, mashed bananas, and pineapple until smooth.
4.Mix the Batter β Gradually add wet ingredients to the dry mixture, stirring gently. Fold in chopped nuts if using.
5.Bake β Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
6.Cool & Glaze β Let the bread cool before drizzling with glaze.
