HUMMINGBIRD BREAD

Ingredients

For the Bread:

β€’2 cups all-purpose flour

β€’1 cup granulated sugar

β€’Β½ cup brown sugar, packed

β€’1 tsp baking soda

β€’1 tsp cinnamon

β€’Β½ tsp salt

β€’2 large eggs

β€’Β½ cup vegetable oil

β€’1 tsp vanilla extract

β€’1 cup mashed ripe bananas (about 2 bananas)

β€’Β½ cup crushed pineapple, drained

β€’Β½ cup chopped pecans or walnuts (optional)

For the Glaze (Optional):

β€’1 cup powdered sugar

β€’2 tbsp milk or pineapple juice

β€’Β½ tsp vanilla extract

Instructions

1. Preheat Oven & Prep Pan – Set oven to 350Β°F (175Β°C) and grease a 9×5-inch loaf pan.

2. Mix Dry Ingredients – In a large bowl, whisk together flour, sugar, brown sugar, baking soda, cinnamon, and salt.

3. Combine Wet Ingredients – In another bowl, whisk eggs, oil, vanilla, mashed bananas, and pineapple until smooth.

4.Mix the Batter – Gradually add wet ingredients to the dry mixture, stirring gently. Fold in chopped nuts if using.

5.Bake – Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

6.Cool & Glaze – Let the bread cool before drizzling with glaze.

7.Enjoy! – Slice and serve with butter or cream cheese for extra indulgence!
