Ingredients
For the Bread:
•2 cups all-purpose flour
•1 cup granulated sugar
•½ cup brown sugar, packed
•1 tsp baking soda
•1 tsp cinnamon
•½ tsp salt
•2 large eggs
•½ cup vegetable oil
•1 tsp vanilla extract
•1 cup mashed ripe bananas (about 2 bananas)
•½ cup crushed pineapple, drained
•½ cup chopped pecans or walnuts (optional)
For the Glaze (Optional):
•1 cup powdered sugar
•2 tbsp milk or pineapple juice
•½ tsp vanilla extract
Instructions
1. Preheat Oven & Prep Pan – Set oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. Mix Dry Ingredients – In a large bowl, whisk together flour, sugar, brown sugar, baking soda, cinnamon, and salt.
3. Combine Wet Ingredients – In another bowl, whisk eggs, oil, vanilla, mashed bananas, and pineapple until smooth.
4.Mix the Batter – Gradually add wet ingredients to the dry mixture, stirring gently. Fold in chopped nuts if using.
5.Bake – Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
6.Cool & Glaze – Let the bread cool before drizzling with glaze.
