Homemade pineapple ice cream

Pineapple Soft Serve Ice Cream

Ingredients:

2 cups frozen pineapple chunks (fresh or store-bought)
1 (14-ounce) can sweetened condensed milk
1/2 cup cold heavy whipping cream
Equipment:

Food processor
Freezer-safe container (optional)
Instructions:

Freeze the pineapple: If using fresh pineapple, core, peel, and cut it into 1-inch chunks. Spread the chunks on a baking sheet in a single layer and freeze for at least 4 hours, or overnight.

Process the soft serve: Add the frozen pineapple chunks, sweetened condensed milk, and cold heavy whipping cream to a food processor. Pulse a few times to break up the pineapple, then process continuously until smooth and creamy, scraping down the sides as needed. This takes about 1-2 minutes.

Serve immediately: For the best soft-serve texture, enjoy immediately! Serve in cones or bowls, and top with your favorite toppings like chopped nuts, maraschino cherries, or a drizzle of pineapple juice.

Tips:

Creamier texture: For a slightly creamier texture, let the frozen pineapple sit at room temperature for 5-10 minutes before processing.
Frozen storage: If storing leftovers, transfer to a freezer-safe container and freeze for up to 2 hours. Let it soften slightly at room temperature before scooping.
Make it vegan: Substitute the sweetened condensed milk with a 14-ounce can of full-fat coconut milk for a vegan option.
