Hamburger Noodle Soup
Hearty Hamburger Noodle Soup with Tomatoes and Parmesan
Ingredients:
2 cups egg noodles (or any sturdy pasta)
1 tablespoon extra virgin olive oil
1 medium onion, diced
1 cup sliced celery
1 cup sliced carrots
2 cloves garlic, minced
1 lb lean ground beef
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon seasoned salt
Salt and pepper, to taste
1 envelope dry onion soup mix
3 cups beef broth
28 oz can diced tomatoes
8 oz can tomato sauce
1 tablespoon soy sauce
1/4 cup grated Parmesan cheese
Directions:
Bring a large pot of water to a boil. Salt generously, add noodles, and cook until al dente. Drain and set aside.
In a large soup pot or Dutch oven, heat olive oil. Add onion, celery, and carrots, and cook until they begin to soften. Add garlic and cook another minute.
Add ground beef and cook, breaking up the meat, until browned and vegetables are soft. Drain any fat if necessary.
Stir in oregano, basil, seasoned salt, and salt and pepper to taste. Add onion soup mix, and stir for 30 seconds.
Add beef broth, diced tomatoes, tomato sauce, and soy sauce. Bring to a boil, then lower the heat and let simmer for about 15 minutes.
Add noodles to the soup and let them heat through for about 5 minutes. Serve topped with Parmesan cheese.
