Golden Crispy Cauliflower Bites

Ingredients
For the Cauliflower Bites:

1 medium head of cauliflower, cut into florets
2 large eggs
1 tablespoon hot sauce (choose your favorite)
1 cup Panko bread crumbs
1 tablespoon chopped fresh parsley (optional)
Salt and pepper to taste
For the Buffalo Sauce:

1/2 cup hot sauce (your preference)
1/4 cup melted butter
For the Herby Yogurt Dip:

1/3 cup mayonnaise
1/3 cup plain Greek yogurt
1 tablespoon chopped fresh parsley
1/2 teaspoon dried dill
1/4 teaspoon sea salt
1/4 teaspoon black pepper
Squeeze of fresh lime juice

Instructions
Prepare the Cauliflower Bites:

Preheat your oven to 425°F (220°C). Place a wire baking rack on a cookie sheet, or line the baking sheet with parchment paper if you don’t have a rack.
In a small bowl, whisk together the eggs and 1 tablespoon of hot sauce.
In another bowl, mix the Panko bread crumbs, parsley, salt, and pepper.
Dip each cauliflower floret first in the egg mixture, then coat it in the bread crumb mixture. Use one hand for the wet ingredients and the other for the dry ingredients.
Arrange the breaded cauliflower on the prepared baking rack or baking sheet.
Bake for 15 minutes, flip the florets, then bake for an additional 10-15 minutes until they are golden brown and crispy.
Optional: If using the buffalo sauce, toss the cooked cauliflower in a bowl with the buffalo sauce and bake for an additional 5 minutes.
Make the Buffalo Sauce:

Mix the melted butter with the hot sauce until well combined.
Prepare the Herby Yogurt Dip:

Combine all dip ingredients in a bowl and mix well.
Refrigerate until ready to serve.
Serve:

Enjoy the golden crispy cauliflower bites with the herby yogurt dip on the side.
