Theirs was always perfectly al dente with slightly crispy edges, full of rich savory flavors, and loaded up with plenty of extra veggies, eggs, and whatever protein sounded good.

A quick fried rice recipe like you get at your favorite Chinese restaurant. Leftover rice, plus a couple of eggs, baby carrots, peas, and soy sauce is all you need. Garnish with sliced green onions, if desired.
Fried Rice
Ingredients:
2 cups long grain rice
2 cups water
2 cups vegetable broth
1/2 teaspoon salt
2 teaspoons vegetable oil
2 large eggs, whisked
1/3 cup frozen peas and carrots
2 tablespoons scallions, thinly sliced
1/2 teaspoon sesame oil
Instructions:
Cook the Rice:
Rinse the rice thoroughly and place it in a pot with water, vegetable broth, and salt. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for 20 minutes. Once cooked, let the rice sit for an additional 10 minutes.
Transfer the cooked rice to a container and refrigerate for 1-2 hours to cool.
Prepare the Fried Rice:
Heat a wok over high heat and add the vegetable oil.
Pour in the whisked eggs and stir-fry until they are fully cooked. Break them into small pieces.
Add the frozen peas, carrots, and scallions to the wok. Stir-fry for a few minutes until the vegetables are tender.
Mix in the cooled rice, breaking up any clumps, and stir everything together.
Drizzle the sesame oil over the rice mixture, continuing to stir-fry until everything is well combined and heated through.
Serve:
Serve the fried rice hot, garnished with additional scallions if desired.
