Epic Beef Nachos Supreme
Ingredients:
- Taco Seasoning (or 1 packet/serving of store-bought taco seasoning)
- 1 pound ground beef
- 1/2 yellow onion, diced
- 2 bags tortilla chips (16 ounces each)
- 1 can refried beans
- 16 ounces shredded cheese of choice (such as cheddar and Monterey jack)
- 3 roma tomatoes, diced
- 2 to 3 green onions, sliced
Instructions:
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit.
- Cook Ground Beef: In a skillet over medium-high heat, brown the ground beef and diced onions until fully cooked, about 8 minutes. Drain excess grease.
- Season Beef: Return the cooked beef to the skillet and sprinkle with taco seasoning. Stir in 3/4 cup of water, bring to a simmer, and cook until most of the liquid evaporates, about 5 minutes.
- Prepare Chips: While the beef is cooking, spread a generous layer of tortilla chips onto two baking sheets lined with parchment paper.
- Add Layers: Spoon refried beans onto the chips, dividing evenly between the two pans. Add spoonfuls of beans all over the chips; they will spread as they heat in the oven.
- Add Beef: Spoon half of the cooked ground beef onto each pan of chips.
- Add Cheese: Sprinkle shredded cheese evenly over both pans of nachos.
- Bake: Place the baking sheets in the preheated oven and bake at 400°F for 15 minutes, or until the cheese is melted and bubbly.
- Top and Serve: Remove the nachos from the oven and sprinkle diced tomatoes and green onions over the top. Serve immediately.
Recipe Notes:
- Use thick and sturdy tortilla chips for best results. Thin chips may break under the weight of the toppings.
- This recipe is great for entertaining. If serving a smaller crowd (4 to 6 people), halve the recipe by adjusting the number of servings on the recipe card.
