Ingredients
For the Cake:
• 1 box yellow cake mix
• 1 box instant vanilla pudding (3-ounce box, not sugar-free)
• 4 large eggs
• 1/2 cup vegetable oil
• 1 cup milk
• 1 can (16 ounces) crushed pineapple (with juice — do not drain!)
• 1 cup granulated sugar
For the Frosting:
• 1 package (8 ounces) cream cheese, softened
• 1/2 cup (1 stick) unsalted butter, softened
• 3–4 cups powdered sugar (adjust for desired sweetness/thickness)
• 1 teaspoon vanilla extract
• 1/2 cup chopped pecans or walnuts (optional, for topping)
Instructions
1. Make the Cake:
• Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
• In a large bowl, combine the cake mix, vanilla pudding, eggs, oil, and milk. Beat with a hand mixer or whisk until smooth and fully combined (about 2 minutes).
• Pour the batter into the prepared baking dish and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
2. Add Pineapple Mixture:
• While the cake is baking, combine the crushed pineapple (with juice) and 1 cup of sugar in a saucepan.
• Bring to a gentle boil over medium heat, stirring occasionally until the sugar is dissolved.
• When the cake comes out of the oven, poke holes all over the top with a fork or skewer, then pour the warm pineapple mixture evenly over the cake.
• Let the cake cool completely before frosting.
3. Make the Frosting:
• In a large bowl, beat together the cream cheese and butter until smooth and fluffy.
• Gradually mix in the powdered sugar and vanilla extract, beating until creamy.
