Easy Chocolate Pie

My mother-in-law isn’t a baker, but she has a serious sweet tooth. When she pulled out a chocolate-smudged cookbook on our first shared Thanksgiving holiday, she turned straight to the chapter on pie — and specifically, a recipe for whipped cream-topped chocolate pie. Ever since, I’ve accepted chocolate pie as a welcome addition to any holiday spread.

The version I’m sharing here is one I know she’d be proud of. It’s decadent yet easy enough for novice bakers, and can even be made completely without an oven. If you’re looking for a fuss-free way to incorporate chocolate into your Thanksgiving spread, this is the pie for you.

This Easy Chocolate Pie is so simple but decadent. And yet not overly sweet. You only need 5 pantry ingredients for the filling and 5 minutes of prep. The hardest part is waiting for it to be done baking!
Whenever my husband, the one I call Marlboro Man, imagines chocolate pie—and he imagines it frequently, because it’s one of his favorite chocolate desserts—he doesn’t think of French silk pie or chocolate chiffon pie or chocolate chess pie or chocolate meringue pie or any other variation. He thinks of this one. This is just a good ol’ basic, can’t-go-wrong, everyone-loves-it, super-easy-to-make, been-around-forever pie recipe with a chocolate pudding filling, and my beloved could seriously eat a slice every day of his life and never get bored.

Easy Chocolate Pie

Ingredients:

1 1/2 cups milk
1/2 cup sugar
1/4 teaspoon salt
3 tablespoons cocoa powder
3 tablespoons all-purpose flour
2 egg yolks, beaten
1 teaspoon vanilla extract
1 baked pie shell
Cool Whip or whipped cream

Instructions:

Heat Milk: Warm the milk in a medium-sized pot over medium heat.
Combine Dry Ingredients: In a separate bowl, mix together the sugar, flour, salt, and cocoa powder.
Mix and Cook: Gradually add the dry mixture to the warm milk, stirring constantly until thickened.
Temper Eggs: Slowly add a small amount of the hot milk mixture to the beaten egg yolks, stirring well. Then, pour the egg yolk mixture back into the pot, stirring constantly.
Cook Pudding: Continue cooking the mixture for at least two minutes to thicken.
Add Vanilla: Stir in the vanilla extract.
Assemble Pie: Pour the chocolate pudding into the baked pie shell.
Cool and Serve: Allow the pie to cool. Once cooled, top with Cool Whip or whipped cream.
