Hearty Crockpot Cowboy Soup

Ingredients

  • 2 lbs ground beef
  • 4 Yukon Gold potatoes, peeled and cut into small cubes
  • 2 cans mixed vegetables, undrained
  • 1 can sweet corn, undrained
  • 1 can condensed tomato soup
  • 1 can diced tomatoes
  • 1 can cut green beans, undrained
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons sugar

Instructions

  1. Prepare the Potatoes:
    • Peel the Yukon Gold potatoes and cut them into small cubes.
  2. Brown the Beef:
    • In a skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Combine Ingredients in Slow Cooker:
    • Place the browned ground beef and cubed potatoes into a large slow cooker.
    • Add the undrained cans of mixed vegetables, sweet corn, and green beans.
    • Stir in the can of condensed tomato soup and the can of diced tomatoes.
  4. Season and Sweeten:
    • Season with salt and pepper to taste.
    • Add 2 tablespoons of sugar (the secret ingredient, thanks to Grandma Hazel!).
  5. Cook:
    • Mix all the ingredients together well.
    • Cook on low for 2-3 hours until the potatoes are tender and the flavors are well combined.
