Hearty Crockpot Cowboy Soup

Ingredients
- 2 lbs ground beef
- 4 Yukon Gold potatoes, peeled and cut into small cubes
- 2 cans mixed vegetables, undrained
- 1 can sweet corn, undrained
- 1 can condensed tomato soup
- 1 can diced tomatoes
- 1 can cut green beans, undrained
- Salt, to taste
- Pepper, to taste
- 2 tablespoons sugar
Instructions
- Prepare the Potatoes:
- Peel the Yukon Gold potatoes and cut them into small cubes.
- Brown the Beef:
- In a skillet, brown the ground beef over medium heat. Drain any excess fat.
- Combine Ingredients in Slow Cooker:
- Place the browned ground beef and cubed potatoes into a large slow cooker.
- Add the undrained cans of mixed vegetables, sweet corn, and green beans.
- Stir in the can of condensed tomato soup and the can of diced tomatoes.
- Season and Sweeten:
- Season with salt and pepper to taste.
- Add 2 tablespoons of sugar (the secret ingredient, thanks to Grandma Hazel!).
- Cook:
- Mix all the ingredients together well.
- Cook on low for 2-3 hours until the potatoes are tender and the flavors are well combined.
