Crispy Golden Ham & Cheese Breakfast Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 cup diced ham
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder.
  3. In another bowl, beat the eggs, then add milk and melted butter. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined (don’t overmix).
  5. Fold in the diced ham, 1 cup of the cheese, and green onions.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Sprinkle the remaining 1/2 cup of cheese on top of each muffin.
  8. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 5 minutes before removing to a wire rack.
