City Chicken Recipe 🍗🍢 (But No Chicken!)
Despite its name, City Chicken doesn’t actually contain chicken! This classic Great Lakes and Midwest dish, popular in Pittsburgh, Cleveland, and Detroit, features skewered pork (or veal) that’s breaded, browned, and baked to perfection—mimicking fried chicken. It’s crispy on the outside, tender inside, and full of nostalgic comfort!
Ingredients
•1 ½ lbs pork (or veal), cut into 1 ½-inch cubes
•8 wooden skewers
•1 cup all-purpose flour
•2 large eggs
•2 tbsp milk or water
•1 cup breadcrumbs (plain or seasoned)
•1 tsp salt
•½ tsp black pepper
•½ tsp garlic powder
•½ tsp paprika
•2 tbsp vegetable oil (for frying)
•1 cup chicken broth (for baking)
Instructions
1.Preheat Oven – Set to 350°F (175°C). Grease a baking dish.
2. Assemble Skewers – Thread 3-4 pork cubes onto each skewer.
3. Bread the Meat
•Place flour in one bowl.
•In a second bowl, whisk eggs with milk.
•In a third bowl, mix breadcrumbs, salt, pepper, garlic powder, and paprika.
•Dredge each skewer in flour, dip in egg wash, then coat with breadcrumbs.
4.Brown the Skewers – Heat oil in a skillet over medium heat. Fry the skewers for 2-3 minutes per side until golden brown.
5.Bake to Perfection – Place skewers in the baking dish, add chicken broth, cover with foil, and bake for 30-40 minutes until tender.
6.Serve & Enjoy! – Let them rest for a few minutes and serve with mashed potatoes, gravy, or veggies.
