Christmas Cherry Cheesecake Bars

Ingredients:
Base Layer:
8.5 oz sugar cookie mix
4 tablespoons cold unsalted butter, cubed
1 large egg
Cheesecake Layer:
8 oz cream cheese, softened
¼ cup granulated sugar
1 tablespoon all-purpose flour
1 large egg
1 teaspoon vanilla extract
1 (21 oz) can cherry pie filling
Instructions:
Preheat oven to 350°F. Line 8×8 pan with parchment.
Base Layer: Mix cookie mix, butter, and egg until crumbly. Press into pan.
Cheesecake Layer: Beat cream cheese and sugar until smooth. Add flour, egg, vanilla. Mix well.
Pour over crust. Top with cherry pie filling.
Bake 28-32 minutes until edges are light golden.
Cool completely, then refrigerate 2 hours before cutting.
Storage: Keep refrigerated up to 5 days.
