•1 cup (240ml) Guinness stout (or another dark stout)
•1 cup (226g) unsalted butter, cubed
•3/4 cup (70g) unsweetened cocoa powder
•2 cups (400g) granulated sugar
•2 large eggs
•2/3 cup (160ml) sour cream
•1 tablespoon vanilla extract
•2 cups (250g) all-purpose flour
•1 1/2 teaspoons baking powder
•1/2 teaspoon baking soda
•1/2 teaspoon salt
For the Baileys Buttercream Frosting:
•1 cup (226g) unsalted butter, softened
•4 cups (480g) powdered sugar, sifted
•3 tablespoons Baileys Irish Cream
•1 teaspoon vanilla extract
•Pinch of salt
Instructions:
For the Chocolate Guinness Cake:
1.Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
2.Combine Guinness and Butter: In a saucepan over medium heat, pour in the Guinness and add the cubed butter. Stir occasionally until the butter melts. Once melted, whisk in the cocoa powder and sugar until smooth and combined. Remove from heat and let cool slightly.
3.Mix Wet Ingredients: In a large bowl, whisk together the eggs, sour cream, and vanilla extract. Add the cooled Guinness mixture and stir to combine.
4.Add Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
5.Bake: Divide the batter evenly between the two prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
For the Baileys Buttercream Frosting:
1.Make the Frosting: In a large bowl, beat the softened butter using an electric mixer on medium speed for 2-3 minutes until creamy.
2.Add Powdered Sugar: Gradually add the powdered sugar, one cup at a time, mixing until smooth. Add the Baileys Irish Cream, vanilla extract, and a pinch of salt, and continue beating until the frosting is fluffy and smooth, about 3-4 minutes.
Assembling the Cake:
1.Layer the Cakes: Once the cakes have completely cooled, place one cake layer on a serving plate or cake stand. Spread a generous layer of Baileys buttercream frosting on top.
2.Add the Second Layer: Place the second cake layer on top, pressing gently. Frost the top and sides of the entire cake with the Baileys buttercream.
3.Decorate: Optional: Decorate the top of the cake with chocolate shavings, cocoa powder, or even extra Baileys drizzle for a fun touch!
