Chicken Chow Mein
Ingredients:
8 oz chow mein noodles
1 lb chicken breast, thinly sliced
2 tbsp vegetable oil, divided
1 small onion, thinly sliced
1 cup cabbage, shredded
1 cup carrots, julienned
1 cup bell pepper, sliced
3 green onions, chopped
2 cloves garlic, minced
1 tbsp fresh ginger, minced
For the Sauce:
1/4 cup soy sauce
2 tbsp oyster sauce
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp sugar
1/4 tsp black pepper
Directions:
Cook the chow mein noodles according to package instructions. Drain, rinse under cold water, and set aside.
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and black pepper to make the sauce. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5 minutes. Remove the chicken from the skillet and set aside.
Add the remaining tablespoon of oil to the skillet. Sauté the onion, cabbage, carrots, and bell pepper for 3-4 minutes, until softened. Add garlic and ginger, and cook for another 1-2 minutes until fragrant.
Return the chicken to the skillet, add the cooked noodles, and pour in the sauce. Toss everything together until well coated and heated through.
Garnish with chopped green onions and serve immediately.
