Ingredients
•1 ½ cups pitted Medjool dates (softened if needed)
•1 cup walnuts (lightly toasted for extra flavor)
•½ cup oats (quick or rolled)
•2 tbsp chia seeds (optional for added nutrition)
•½ tsp cinnamon
•1 tsp vanilla extract
•¼ tsp salt
•2 tbsp honey or maple syrup (optional for extra sweetness)
Instructions
1️⃣ Prepare the Dates – If the dates are dry, soak them in warm water for 10 minutes, then drain.
2️⃣ Blend the Ingredients – In a food processor, blend walnuts, oats, and chia seeds (if using) until finely ground.
3️⃣ Add Dates & Flavorings – Add dates, cinnamon, vanilla, salt, and honey/maple syrup. Blend until the mixture forms a sticky dough.
4️⃣ Press into a Pan – Line an 8×8-inch baking dish with parchment paper. Press the mixture evenly into the pan.
5️⃣ Chill & Set – Refrigerate for at least 1 hour, then cut into bars.
6️⃣ Enjoy! – Store in an airtight container in the fridge for a chewy texture or freeze for longer storage.
