Ingredients
For the Cupcakes:
•1 ½ cups all-purpose flour
•1 ½ tsp baking powder
•¼ tsp salt
•½ cup unsalted butter, softened
•¾ cup sugar
•2 large eggs
•1 ½ tsp vanilla extract
•½ cup whole milk
For the Pastry Cream Filling:
•1 cup whole milk
•2 large egg yolks
•¼ cup sugar
•1 tbsp cornstarch
•½ tsp vanilla extract
For the Chocolate Ganache:
•½ cup heavy cream
•4 oz semi-sweet chocolate, chopped
Instructions
Make the Cupcakes:
1.Preheat oven to 350°F and line a muffin tin with cupcake liners.
2.In a bowl, whisk together flour, baking powder, and salt.
3.In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
4.Alternate adding the dry ingredients and milk, mixing until combined.
5.Divide batter among cupcake liners, filling about ¾ full.
6.Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
Make the Pastry Cream Filling:
7.In a saucepan, heat milk over medium heat until warm but not boiling.
8.In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.
9.Slowly pour warm milk into the egg mixture while whisking continuously.
10.Return mixture to the saucepan and cook over medium heat, stirring until thickened.
11.Remove from heat, stir in vanilla, and let cool completely.
Fill the Cupcakes:
12.Use a small knife or cupcake corer to remove the center of each cupcake.
13.Fill a piping bag with the pastry cream and pipe it into the holes.
Make the Ganache:
14.Heat heavy cream until just simmering, then pour over chopped chocolate. Let sit for 1-2 minutes, then stir until smooth.
15.Spoon ganache over the filled cupcakes.
