•½ tsp baking powder

•½ cup fresh blueberries

•½ tsp lemon zest (optional, for extra flavor)

 

Instructions

1️⃣ Preheat Oven – Set your oven to 300°F (150°C) and line a baking sheet with parchment paper.

2️⃣ Beat Egg Whites – In a clean bowl, beat the egg whites with a hand mixer until stiff peaks form. This helps give the bread its signature fluffy texture.

3️⃣ Prepare the Cottage Cheese Mixture – In a separate bowl, mix cottage cheese, honey (if using), vanilla extract, salt, baking powder, and lemon zest until smooth.

4️⃣ Combine the Mixtures – Gently fold the beaten egg whites into the cottage cheese mixture a little at a time, being careful not to deflate the batter.

6️⃣ Shape & Bake – Spoon the batter onto the lined baking sheet in small mounds or shape into a loaf. Bake for 25-30 minutes or until golden brown and set.
