Baked Cream Cheese Spaghetti Casserole

This cream cheese baked spaghetti is a perfect weeknight meal but good enough to have on a special occasion. Mixing cream cheese with the spaghetti noodles makes the whole dish rich, almost like lasagna without the work. All of the fresh veggies give the sauce so much flavor, with a subtle sweetness thanks to the carrots. The cheese mixture on top is the perfect gooey topping. We think after you try this, you’ll be making it all the time.
